This is a quick and easy recipe that will make enough servings to last 3-4 meals.
- Melt coconut oil in a large skillet and brown meat on medium high heat.
- Add sliced veggies and stir fry until tender (about 5 minutes).
- If so desired, lower heat to medium low and add eggs to make a scramble.
- Serve cubed avocado on top of stir fry/scramble.
