Cinco De Mayo Taco Salad!

Ingredients
Taco Salad
Guacamole
  • 1 large or 2 small avocados, pitted and peeled
  • ½ white onion, finely chopped
  • small bunch of cilantro, finely chopped
  • juice of 1 lime
  • salt and pepper to taste
Pico De Gallo
  • 4 roma tomatoes pitted, seeded and chopped
  • ½ white onion finely chopped
  • 1 bunch fresh cilantro, chopped
  • juice of 1 lime
  • diced jalapeno
  • salt and pepper to taste
Instructions
Taco Salad
  1. Heat oil, lard or bacon fat in large skillet on medium heat.
  2. Add onion, bell pepper and garlic and sautee until onion is tender and clear.
  3. While onion and pepper are sauteeing, combine ground beef, cumin and chipotle in a large mixing bowl.
  4. Add ground beef mixture to skillet and brown.
  5. Reduce heat to low and simmer another 10-20 min.
  6. Place salad greens on a plate and put ground beef on top.
  7. Add pico de gallo and guacamole.
Guacamole
  1. In a large bowl, spoon out avocado and mash with a fork until desired consistency.
  2. Add onion, cilantro and lime juice. Season with salt and pepper.
  3. Store in airtight container with avocado pit to preserve freshness.
Pico De Gallo
  1. Place all ingredients into food processor or blender and chop coarsely until mixture reaches desired consistency. I usually do about 5-8 pulses and it's good to go.
  2. Set aside or store in fridge when done.
Notes
If you're not abstaining from alcohol, now would be a great time to pour yourself a tequila and soda water to enjoy with your meal.
