Chorizo Stir Fry

Ingredients
  • 1 lb chorizo, loose
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, sliced into half rings
  • 1 cup sliced baby mushrooms
  • 1 head broccoli cut into florets
  • sea salt, to taste
  • black pepper, to taste
  • 1 tbs lard
Instructions
  1. Melt lard in a large skillet over medium heat
  2. Add onions to skillet and sautee until just translucent. About 3 minutes
  3. Add chorizo and cook in skillet until browned.
  4. Add bell peppers, mushrooms, salt and pepper and sautee an additional 3 minutes or until the peppers start to soften.
  5. Finally stir in broccoli and cook until done. The longer you cook, the softer the broccoli will be. About 3-5 minutes.
  6. Remove from skillet and enjoy.
