Hickory BBQ Sauce

Ingredients
6 roma tomatoes, diced
1 large yellow onion, sliced
4 cloves garlic, chopped
2 tbs smoked paprika
1 can tomato paste
2 tbs raw honey
1 tbs liquid smoke
2 tbs apple cider vinegar
1 tbs coconut aminos
1 tbs lard
salt and pepper to taste
Instructions
Add onions and lard to a
large saucepan
on medium low heat. Season with salt and pepper and carmelize, about 20-30 minutes. The longer you carmelize, the sweeter the sauce will be and the less added sweetener you'll need.
Add garlic and sauté until just beginning to brown, about 5 minutes.
Add tomatoes, smoked paprika, honey, coconut aminos, and apple cider vinegar and let come to a simmer.
Fold in tomato paste and liquid smoke
Turn heat down to low, cover and let simmer for at least 60 minutes but up to 4 hours
Transfer to a
blender
and blend until smooth

Notes
If you don't have roma tomatoes, use
1 14oz can of diced tomatoes
