- 1 pound jumbo sea scallops
- ½ cup plus 1 tablespoon fresh squeezed lime juice
- salt to taste
- 1⁄3 cup minced fresh cilantro
- ½ cup diced red onion
- Cut the scallops into ½-inch chunks.
- Place in a container, pour in the lime juice, and season with salt.
- Cover and refrigerate for at least 3 hours and up to 16 hours.
- Stir in the cilantro and red onion and serve immediately.
Make sure you get the juice from FRESH limes; otherwise the result could end up tasting bitter
