Slim Palate Cookbook | Shrimp Ceviche

Ingredients
  • 1 pound jumbo sea scallops
  • ½ cup plus 1 tablespoon fresh squeezed lime juice
  • salt to taste
  • 1⁄3 cup minced fresh cilantro
  • ½ cup diced red onion
Instructions
  1. Cut the scallops into ½-inch chunks.
  2. Place in a container, pour in the lime juice, and season with salt.
  3. Cover and refrigerate for at least 3 hours and up to 16 hours.
  4. Stir in the cilantro and red onion and serve immediately.
Notes
Make sure you get the juice from FRESH limes; otherwise the result could end up tasting bitter
