Put ghee on a baking sheet and pop into while preheating. This melts the ghee for you, though be sure to check it to make sure it doesn’t burn. Should only take a few minutes.
Cut squash into about ¾ - 1” half-rings.
Toss squash half-rings in ghee on pan, adding in salt and pepper and tossing to cover evenly.
Bake in the oven for 32-35 minutes or until golden brown.
Broil for 5 minutes or until crispy.
Remove from oven. Let cool for a few minutes, then enjoy!
