Braised Short Ribs

Instructions
  1. Preheat oven to 325° F.
  2. In a large oven safe pot or preferably cast iron french oven, saute onion, garlic, celery, and carrots in bacon fat until onion carmelizes.
  3. Add and sweat tomato paste for about 2 min.
  4. Fold tomato paste into onion mixture. Let mixture cook another 2-3 minutes.
  5. Add red wine to pot and deglaze, scooping up any brown bits.
  6. Let wine reduce by half then add beef stock.
  7. Place short ribs in pot and add fresh herbs, peppercorns and bay leaves.
  8. Cover, and place in preheated oven.
  9. Braise for 3-3½ hours, turning short ribs every 30 minutes.
  10. Remove from oven and strain braising liquid to make a sauce.
  11. Enjoy.
Notes
If you don't have a french oven or braised, you can always use a crock pot on high for the same amount of cook time.
